A second one in the same day if I may: Is there a word, phrase or expression in Greek that is similar to "I will not have any desert but will enjoy it vicariously through you?" or "I don't know how to water ski but will enjoy it vicariously through you."

My try would be: "θα το απολαύσω έμμεσα μέσα από σένα"

But as you've stated previously, it's a difficult one.:-)

Dear friends, Is there any way to say "To live vicariously through someone" in Greek? I'm sure there is but I'm having trouble coming up with something that sounds colloquial. Thank you.

Or could you simply say “Θα το απολαύσω νοερά»?

Yes, "μέσα" needs to be included in this case.

"Νοερά" could be used on its own but it wouldn't fully convey the meaning of vicarious.

Inherent in the notion of vicariousness is that the experience is second-hand ie. through another person or persons. In Greek, this aspect needs to be explicitly stated to convey the proper meaning of "vicarious". Hence the need for a qualifying statement such as "μέσα από σένα" etc.
